After that, the fruits are dried for several weeks on branches or in sun-drenched basins, giving the coffee its distinctive flavor and making it renowned for its high content of natural oils.


After the drying process, the coffee is peeled and ground to obtain the roasted beans. Yemeni coffee is prepared using the drip coffee technique or the manual filtering method, where hot water is gradually poured over the ground coffee to extract the aromatic flavors and full concentration of the coffee. Yemeni coffee is renowned for its long roasting time and high intensity, giving it a dark color and a distinct coffee strength.
